First, sharpen your knife on the left side of the handle for easy board control, then turn it over to the back, take out food from the fridge and defrost it on the defroster for a minute or two, after you're done with that, transfer it to the cutting area and watch as the liquid flows into the side channels that serve to drain it while you cut.
When that's done and you're ready to season, simply grind garlic or anything else with the grinding teeth on your right side.
